| This is a wonderful use for an excess of cherry tomatoes.

Serves 4 - 6
Ingredients
1 punnet cherry tomatoes
4 garlic cloves, peeled and sliced
2 tablespoons chives, finely chopped
1/4 cup extra-virgin olive oil
juice of 1 lemon
Freshly cracked black pepper
Sea Salt to season
Method
1. Preheat the oven to 175C / 350F / Gas 4.
2. Place the tomatoes in a baking dish.
3. Add the garlic and chives, and toss through.
4. Pour the olive oil over the tomatoes, followed by the lemon juice.
5. Toss again, then season with black pepper.
6. Place in the oven for 20-30 minutes, until the tomatoes have burst open and the garlic is tender.
7. Remove from the oven and season with salt to taste.
8. Serve hot, warm, or chilled as a side dish.

| | | A fresh and crunchy salad that combines fruits and nuts for extra flavour.

Serves 4
Ingredients
½ Head of your favourite Lettuce, washed and torn roughly
1 Red Apple, cored and diced
1 Green Apple, cored and diced
1 handful Raw Cashews
1 Stick Celery, finely sliced
Dressing:
1 ½ Tbsp Low fat Mayonnaise
1 ½ Tsp Seeded Mustard
2 Tsp Honey
1 Tbp Extra Virgin Olive Oil (Optional)
Method
1. Place the lettuce, apples, cashews and celery into a salad bowl.
2. Place all the ingredients for the dressing into a small jar or bottle and shake well.
3. Serve the salad with the dressing and toss well.
Notes and Tips:
- The dressing also keeps well in fridge if you want to prepare it ahead or make more for later.
- Enjoy with toasted turkish bread fingers or Tortilla strips, or on it's own.
- Also goes well with chicken.
- Serves 4 as a side salad or 2 as a main meal. |

Serves 4
Ingredients
2 heads of broccoli, chopped into small florets
1/2 cup celery, diced
1 Spring (Green) onion, finely chopped
1/4 cup Diced bacon (trimmed of fat)
1/4 cup Sunflower seeds
1/2 cup sultanas
1/4 cup cashews
1/4 cup almonds
Dressing Suggestion:
1 Cup Mayonaise
2 Tbsp Olive Oil
2 Tbsp Vinegar (balsamic or other)
Method
1. Cook the bacon in a small frying pan.
2. Mix all ingredients together on a large serving platter or bowl.
3. Whisk together the dressing ingredients, then pour the dressing over the salad and serve. |

Serves 2
Ingredients
1 large raw beetroot
2 tsp grain mustard
2 tsp honey
A squeeze of fresh lemon juice
Method
1. Peel the beetroot and shred or grate.
2. Mix the grain mustard, honey and lemon juice and melt gently together on a stove or in microwave.
3. Mix with the beetroot and serve. |

Serves 2
Ingredients
1 skinless chicken breast - cooked and diced
4 handfuls of baby spinach
2 handfuls of rocket (arugula)
12 cherry tomatoes - halved
4 Tablespoons of raw cashews - chopped
1 orange - peeled and segmented
Dressing:
6 Tablespoons Balsamic Vinegar
2 Tablespoon Extra Virgin Olive Oil
2 Tablespoon chopped parsley
1 handful of Blueberries
Instructions
1. Wash the baby spinach, rocket and tomatoes, then combine them with the other salad ingredients.
2. Mix together the dressing ingredients (except the blueberries).
3. Pour over the salad and sprinkle with the blueberries.
Notes and Tips:
- If you don't have left over chicken, you can lightly panfry or grill a chicken breast, however, the preparation time will be extended by about 10 minutes. |

Serves 1
Ingredients
1 chicken breast - cooked and diced
1 carrot - grated
2 cups of cabbage - finely sliced
1 handful of bean shoots
1/2 red capsicum (pepper) - diced
1 green (spring) onion - sliced
1/2 cup fresh pineapple - chopped
Dressing Ingredients:
1 clove garlic - crushed
2 Tablespoons chopped mint
2 Tablespoons chopped coriander
2 Tablespoons Coleslaw Dressing
Method
1. Mix the salad ingredients together in a large bowl or lunch box. Add the cooked chicken.
2. Mix the dressing Ingredients together and pour over the coleslaw.
Notes and Tips:
- If using chicken that needs pre cooking, the preparation time will be 10 minutes extra.
- You could use any type of leftover chicken: thighs, breast or even roasted or BBQ'ed chicken.
