Spinach, Mandarin and Cashew Salad

A very light salad with a delightful sauce! The combination of flavours makes it a really interesting side salad, with the spinach, citrus and cashews also providing many health benefits.

Serves 4 

Ingredients  

2 tsp Soy sauce (low salt)
4 tsp Fresh lime juice
2 tsp Spring (green) onion, finely chopped
1 Tbsp Olive oil (Extra virgin)
2 1/2 Cup Baby spinach
2 Mandarins, sectioned
4 Tbsp Cashews, chopped

Method

1. Make the dressing by combining the soy sauce, lime juice, spring onion and olive oil in a jar and shake well.
2. Place the spinach in a bowl and toss with the dressing, then transfer to a serving plate.
3. Place the mandarin on top and sprinkle with cashews and it's ready to serve.

Notes & tips:

If mandarins are out of season, feel free to use an orange instead.
