Asian Style Coleslaw

 

Asian style coleslaw

Add some tofu for a perfect meal for vegetarians...or serve as a side salad as it is! It uses a wonderful ingredient called Chinese Cabbage, which is an extremely versatile vegetable that has been cultivated for about 6000 years! It works wonderfully as a base for dishes with a lot of sauce insead of rice.

Serves 4 

Ingredients  

2 Medium Carrots
1 Celery stick, sliced
2 Cups Chinese cabbage, finely sliced
2 Spring onions, finely chopped
1/2 Cup Fresh coriander leaves
3 Tbsp Olive oil (Extra virgin)
1 Tbsp Honey
1 Tbsp Soy sauce (low salt)
2 Tbsp Fresh lime juice

Method

Use a vegetable peeler to peel ribbons from the carrot. Combine the carrot with celery, cabbage, spring onions and coriander in a large bowl.Make the dressing by combining the olive oil, honey, soy sauce and lime juice in a jar. Shake well and drizzle over the salad to serve.

Notes & tips:

Spring onions are the long green ones with the white part at the root. Also know as scallions, shallots, eschallots or green onions, depending on where you live! They have a milder flavour than regular onions, so are great in salads.
