Apricot and Date Chocolate Brownies

 

Apricot and Date Chocolate BrowniesA variation to our famous Fudge Brownies - these are delicious!

Serves 18

Ingredients

3/4 Cup Oats
1/2 Cup Wheatgerm
1/2 Cup Walnuts, chopped
1/2 tsp Baking powder
200 g Dark chocolate
3 Tbsp Butter
3 Tbsp Soy milk
1 Tbsp Honey
3 Eggs - Free range, lightly beaten
1/2 Cup Dried apricots, chopped
1/2 Cup Dates, pitted and chopped

Method

1. Preheat your oven to 180C / 350F / Gas 4 and grease a slice tin.
2. In a large bowl, mix the oats, wheatgerm, walnuts and baking powder.
3. In a separate bowl, add the soy milk, honey, eggs, apricots and dates and mix well.
4. Next, melt the chocolate and butter in the microwave or in a metal bowl over a saucepan of simmering water. Be careful not to burn it. Heat it gently, and stir often so the heat is evenly dispersed.
5. Add the chocolate and butter to the wet ingredients, combine well then transfer the mixture into the bowl with dry ingredients. Mix it through gently, then pour it into your baking tin.
6. Bake for 18-20 minutes or until cooked.

Notes & tips:

- Allow to cool before slicing into squares or rectangles.
- It makes about 18 pieces of brownie.
- If you are using butter that is premarked in 50g lots, 3 tablespoons is about 45g.

I gave in and made them as it is the school holidays and the children have been over. They are divine tasting and the kids' loved them. I sent the rest home with them so I don't eat them.

These look and sound divine but I won't make them as I would probably want to eat them all. Sad

Sad but true unfortunately.
