Apple-misu

 

Apple misu

A totally healthy version of the Italian dessert Tiramisu, using apples, dates and walnuts served with yoghurt instead of the cream. It is delicious!

Serves 6 

Ingredients  

1 Kg Green apples
5 Large Dates, pitted and chopped
1 Cup Water
1 Cup Walnuts, chopped
1 tsp Cinnamon
1 Cup Yoghurt, plain

Method

Start by washing the apples, then cut them into quarters and take the core out with a small knife. Then place the apples in a large saucepan along with the dates, water and cinnamon.

Cook on a very low heat, stirring them occasionally, for about 20-25 minutes or until the water has mostly evaporated. Remove from the stove, and transfer the mixture to a blender or food processor. Blend until it’s a smooth consistency.

Scrape the mixture into a bowl and allow to cool.

The Apple-Misu can be made in any small bowl, but we like using a drinking glass to give you the full effect of the layers. Add a big spoonful of the apple mixture to the bottom of the glass, then follow this with a spoonful of yoghurt. Sprinkle on some of the walnuts to form your third layer. Then add another big spoonful of the apple, but this time just add a big dollop of yoghurt to the top and sprinkle it with nuts.

Notes and Tips:

Traditionally Tiramisu was thought to have been made as a “pick-me-up” (the name translates in to this in Italian) because of all the caffeine and cocoa contained in the traditional recipes, so the apple version is definitely a better dessert to be eating before you go to bed!

We tried this on the weekend and it is absolutely delicious! Not too difficult even for those who don't regard themselves as cooks.

I loved the way it looked in the tall glasses to present to our guests also.

The only thing I would do next time is change the plain yoghurt for a non-fat flavoured one like French Vanilla or Cheesecake flavoured as my husband is not a yoghurt fan. I loved it just as it was though.

This was nice and sweet. I love natural yoghurt haven't tried it on the rest of the family yet.

YUMMO

Once again, this is another favourite of mine. Easy to make, tastes great, and the walnuts are awesome. It reminds me of an apple crumble somewhat. As I'm not good with dairy, just a dollop of yoghurt does me fine. I'm such a sweet tooth so this is great!!!
