Apple and Walnut Avocados

 

Apple walnut avocados

A tasty, light appetiser great for impressing your guests!

Serves 4

Ingredients

2 ripe Avocados, halved and stoned
1/2 Fresh lemon, juiced
2 Red apples, diced
1 Celery stick, sliced
1/2 Cup Walnuts, chopped
1/4 Cup Sunflower seeds
1/4 Cup Sultanas
2 Tbsp Egg mayonnaise
1 pinch Cinnamon
1 pinch Nutmeg

Method

Cut the avocados in half and scoop out the flesh. But don’t throw the skin away, you will be using it again soon!

Place the flesh in a small bowl along with the lemon juice and mash it well. Mix in the apples, celery, walnuts, sunflower seeds and sultanas and stir. Finally, add the mayonnaise, cinnamon and nutmeg.

Fill the avocado shells with the mixture and garnish with a walnut and apple slice.

This looks really yummy, but I think I would rather put it in a nice lettuce leaf, or even on a little plate
