Apple and Pecan Cake

Another delicious Betalife cake that can be eaten guilt free! Pecans are really high in antioxidants, but feel free to add in other nuts like walnuts if you like.

Serves 10 

Ingredients 

1/2 Cup Soy flour
1/2 Cup Wholemeal plain (all-purpose) flour
1/2 Cup Wholemeal self-raising (self-rising) flour
1 tsp Baking powder
1 tsp Cinnamon
1 tsp Nutmeg
2 Eggs - Free range, lightly beaten
1 tsp Vanilla
2 Tbsp Honey
1/3 Cup Olive oil (Extra virgin)
1 Green apple, diced
1/2 Cup Dates, pitted and chopped
1/2 Cup Pecans, chopped

Method

Preheat your oven to 160C / 325F / Gas 3, and grease or line a loaf tin.

Combine the 3 flours, baking powder, cinnamon and nutmeg in a large mixing bowl and gently combine them.

In a separate jug add the eggs, vanilla, honey and oil, mix them well then add it to the rest of the cake mix. Then finally, stir through the apple, dates and pecans.

Pour into your cake tin, then bake for approximately 50 minutes.
