
You will not believe this one! It is so good for you, it could be eaten for dinner instead! Serve it up to your family and they will never believe that healthy food can taste so good.
Serves 8
Ingredients
1x 400g can chickpeas (drained and rinsed)
130 g Zucchini (Courgette)
1 Tbsp Cocoa powder
1/2 Cup Drinking chocolate powder
1/4 Cup Honey
1/4 Cup Freshly squeezed orange juice
2 Eggs - Free range, lightly beaten
1/2 tsp Baking powder (Gluten Free)
Method
Preheat your oven to 175C / 350F / Gas 4.
Grease and lightly flour a non-stick (20cm or 8" round) shallow cake tin.
Combine drained chickpeas and zucchini (leave the skin on) in a food processor. Add to this the cocoa powder, drinking chocolate powder, honey, orange juice, eggs and baking powder.
Blend all the ingredients until you get a nice, smooth consistency, then pour the mixture into the greased tin. Place into the oven, and bake for about 50 minutes. You can test to make sure it is ready by inserting a skewer into the cake then pulling it out. If it comes out clean it is done.
Cool for 10 minutes in the cake tin, then serve.
Notes & tips:
- Our favourite way to serve this is with a dollop of thickened cream and fresh strawberries. Amazingly delicious! This always tastes even better the following day, I am not sure why... but it's a good reason to cook two cakes at once!
- You can buy chickpeas in a can it saves having to cook them. This applies to all beans and lentils, making the canned variety quick and easy. And make sure you drain and rinse them!
- If you want to prepare chickpeas from scratch you can buy them dry in the supermarket, but be sure to correctly prepare them. If you do this you only need approx 260 grams of cooked and drained chickpeas for this recipe, as most of what you pay for in the can is just water!
- If the weather is quite wet outside you might need to add less liquid, so add the juice slowly until you get the correct consistency.

1 November 2008 - 6:26am — GailI made this again a couple of weeks ago but because it is so moist I cooked it in the patty papers. I bought some of those rubber ones and then put them into the proper patty cake tray. I think this is a better way as it is easier to handle the cake and you can eat a whole or a half - whatever you feel like. It still tastes delicious when I make it. One of my work colleagues tried it but did not like it when they made it. Next time I will take some photos to submit.

25 May 2008 - 1:06pm — GailAlmost Chocolate Mud Cake I made this tonight but I only have a Heart Shaped Tin and it may be a bit big but it looks okay. It didn't rise much. Cooked for 35 minutes in my fan forced oven. I will take this to work on Tuesday with some whipped cream and feed to my workmates. Of course I will have a taste as well and if I think it is worth it then I will make it again but only to give away. WOW!! I just had a taste of a small bit that was left in the bottom of the cake tin. It tastes like rich chocolate cake. You would have no clue about the zucchini and chickpeas. I will try and find a smaller tin so that the cake can be a bit higher for next time.

Made this today but substituted baby marrows for the zucchini as the latter appears to have done a runner from the fridge.
I ended up cooking it for 1hr and 10 mins. It's still very moist so maybe I should have left it in for a little bit longer.
I like the nutty taste and am looking forward to finding out what it tastes like tomorrow.

Just thought I would add that it is better the second day just as the instructions say.
I tried it today and was surprised to find it does actually taste much better and is nice on its own without cream or anything else.

Made this today and the children all love it.
I thought it was a bit nutty tasting but that is just a matter of my tastebuds getting used to different things. If the children will eat it, then it can't be too bad.
I am going to try the philly cheese idea as well, it sounds nice.

5 February 2008 - 4:12am — SmileyI have to admit that I was a bit skeptical about this recipe, but glad I tried it now, it is fantastic. Instead of cream, I made an icing out of philly cream cheese mixed with a little honey, and then had some blueberries and sliced nectarines.
Absolutely delicious!
