Almond and Apricot Smoothie

 

Almond and apricot smoothie

Wheatgerm is known as the heart of the wheat kernel, and it’s where all of the goodness is held. It has a very high concentration of essential fatty acids along with many other nutrients like folate, Vitamin B1 and Vitamin E. A lot of people aren’t sure what to do with it, so this combines it in a delicious drink that is great for a breakfast on the run!

Serves 2

Ingredients

2 Cups Soy milk
8 Small Fresh apricots, seeds removed
2 Tbsp Almond meal
1 Tbsp Wheatgerm
1 Tbsp Honey

Method

Place all ingredients in a blender and process until smooth.
Pour into 2 glasses and it’s ready to drink!

Notes & tips:

- You could also add some fruit or vegetables to this smoothie to add to the nutritional content or your daily serves.
- Almond meal can be replaced with other nut meals like hazelnut, or if you don’t have any, add some LSA, lecithin or even linseeds.

I tried this and liked it but I don't think I blended it for long enough but the kids' loved it so it must be good.

I will try it again and blend it a bit more next time. Thanks for the recipe.

I wanted to drink this right off the monitor!

I used to think that the word wheatgerm meant gritty and not very tasty, but this drink changed all that. I was thinking of trying chocolate soy for my kids. I don't think apricot would go with the chocolate, but maybe honeydew, or peaches. Any advice?
